Our Team

Lindsay Nelson
Registered DietitianLindsay Nelson, R.D./L.D., has been a dietitian for nine years in a wide variety of settings. She graduated from the University of Missouri and holds a Certificate of Completion in Adult Weight Management. With a passion in teaching people how to eat in a way that makes them feel and perform the best, while also finding a flexible diet, Lindsay is excited to share her passion with her clients. Most of her time is dedicated to her three boys, ages three and a half and under, teaching them all about cooking, gardening, and nature. Her husband and boys are great guinea pigs in the kitchen, always willing to try her latest food creations. On the weekends, you’ll usually find them outside on a trail, hanging out with friends and family, and always eating good food.

Meredith De La Mare
Nutrition CoachMeredith is the co-founder of Functional Eating and has been coaching nutrition since 2015. She is a CFL2 and a USAW coach, as well as a Certified Yoga Trainer. She has a bachelor’s degree in Applied Science, as well as several nutrition certifications (PN, NASM, ETP, HSN). She had a complete career change at age 40 to devote all her energy to coaching nutrition. She genuinely loves helping people change their lives through a healthy eating plan and fitness. Meredith lives in the Kansas City area with her two kids and two dogs. Originally from Colorado, she has a deep love for the outdoors and the mountains… but the beach is her favorite place to be!

Shauna Kennedy
Corporate & Challenge CoachMeet Shauna! No stranger to high speed, high stress, make it work environments that require quick thinking and creative problem-solving skills, you’ll find this woman tackling nutrition, health, and wellness all while balancing life at full speed. As a homeschooling mom of three, two with special needs, Shauna prioritizes systems and habits that foster decreased mental load and ease of use so that when life gets even crazier than normal her nutrition and training can stay on point. When she’s not in Mom mode she’s in servant mode, helping anyone around her feel truly seen in their humanity and recognize their own worth. She believes in good old fashioned hard work with a heavy dose of joy and compassion, and is never afraid to laugh at herself or indulge in the occasional donut! Shauna is currently completing her Precision Nutrition Certification.

Zach Boyle
Nutrition Coach/Sales SpecialistZach Boyle is a Precision Nutrition Level 1 Nutrition Coach, as well as a group fitness instructor in Central Illinois. Zach found his passion for fitness as a personal trainer over the last eight years. He also worked as a Paramedic and Police Officer, where he was awarded the Porter Williams Award for his distinguished acts of bravery and heroism. After undergoing negative effects to his health caused by stress, poor sleep and nutrition; he decided to pursue a career in health and wellness. Zach has been a Functional Eating client since July 2020 and personally saw tremendous results with the program. He currently lives in Springfield, IL, where he and his wife, Hannah, raise their daughter AJ. Zach is motivated to help others achieve their goals, as he knows Functional Eating will change the lives of others, just like it did for him.
